Quick Red Potatoes with Rosemary

Ingredients

  • 2 pound red potatoes
  • 4 teaspoons dried rosemary, crushed
  • sea salt and black pepper, to taste

Directions

Prep: 1. Wash and dice potatoes. 2. Place in a bowl and microwave uncovered for about 5 minutes, stirring once, until soft. Make: 1. Heat olive oil in a skillet on medium-high heat and sauté potatoes until they begin to brown, about 5 minutes. 2. Season with rosemary, salt and pepper to taste.
