Prep: 1. Peel potatoes and garlic. 2. Chop chives. (if using) Make: 1. Cook potatoes and whole garlic cloves in boiling salted water for 15 minutes or until tender. 2. Drain then let them sit for 5 minutes. 3. Add oil, butter, salt and pepper to taste. 4. Mash potatoes coarsely with wooden spoon. 5. Butter baking pan and broil potatoes for 8 minutes or until crisp and golden. 6. Top with sour cream and chives. (if using)
These are delicious and crispy when broiled but to save time you can easily skip that step.
