Prep: 1. Light a grill. 2. Arrange four 12-by-24-inch sheets of heavy-duty foil on a work surface. 3. Cut tomatoes and heirloom tomatoes if large. 4. Mound tomatoes in center of each sheet, drizzle with olive oil and season with salt and pepper. 5. Fold up foil to create tight packets. Make: 1. Set packets on grill and cover. Grill over moderately high heat for about 10-15 minutes, until tomatoes begin to soften and burst. 2. Using scissors, carefully cut open foil packets and serve.
