Jicama and Watermelon Salad

Ingredients

  • 1 jicama, cut into matchstick pieces
  • 4 cups watermelon in 2-inch chunks
  • 2 oranges, juiced and zested
  • 2 limes, juiced and zested
  • 2 tablespoons honey
  • sea salt and black pepper, to taste
  • 1/3 cup roughly torn fresh mint leaves

Directions

Prep: 1. Cut jicama and watermelon. 2. Squeeze juice from limes and orange (need 1/4 cup lime juice and 1/2 cup orange juice). 3. Zest lime and orange (1 teaspoon each). Make: 1. Whisk together juices and zests, honey, salt and pepper in a large bowl. 2. Add jicama, watermelon and mint and toss to coat.
