Prep: 1. Preheat oven to 375. 2. Season turkey breasts with salt and pepper, drizzle with 1 tablespoon extra virgin olive oil. 3. Roast turkey until cooked through, ~45 minutes to 1 hour. Let cool to touch, then shred meat. (or use leftover turkey or rotisserie chicken!) 4. Thinly slice avocado, cucumber, and bell pepper. 5. Tear lettuce into small pieces. Make: 1. Make dipping sauce, combine hoisin, peanut butter, rice vinegar, and sesame oil in a bowl and set aside. If needed, add water to desired consistency. Set aside. 2. Fill a bowl with warm tap water and soak each spring roll wrapper for about 10-15 seconds per side. 3. Lay soft spring roll wrapper on a cutting board. 4. Lay lettuce first on the soft spring roll wrapper, then add strips of turkey, herbs, avocado, and vegetables. 5. Roll and serve with hoisin dip.
