Prep: 1. In a bowl, toss shredded red and green cabbage with salt. Transfer cabbage to a colander and let it drain for up to 1 hour. (If worried about cabbage being too salty when done with salting process, taste a piece of cabbage and if it concerns you, rinse and drain the cabbage well.) 2. Chop peanuts 3. Cut spinach into 1/2 in ribbons. Make: 2. Put salted, drained cabbage back into a bowl and add spinach. 3. In a medium bowl, whisk lime juice, mustard and cumin together. 4. Add peanut oil in a thin stream, whisking constantly until ingredients are thoroughly emulsified. 5. Toss salad with dressing and add roasted peanuts. Season to taste with salt and pepper.
