Prep: 1. Place mushrooms in hot water. 2. Julienne one scallion. Chop mushrooms, cashews, remaining scallions and garlic. 3. Separate 16 lettuce leaves. 4. Put chicken, cashews, mushrooms, and chopped scallions into a bowl. 5. Combine soy sauce, oyster sauce, wine, cornstarch, sugar, salt, and pepper in separate bowl. 6. Pour over chicken; toss. Let marinate for 15 minutes. Make: 1. Heat oil in a 12" skillet over high heat. Add garlic and cook for 10 seconds. 2. Add chicken mixture and cook while stirring, until browned (about 3 minutes). 3. Spoon some of the chicken onto each lettuce leaf. Garnish with julienned scallion and chile sauce.
