Prep: 1. Mince rosemary. 2. Mince garlic, add a couple of pinches of salt and mince again. Make: 1. Combine rosemary, garlic and olive oil in small bowl. 2. Season lamb chops with salt and pepper. 3. Coat lamb with olive oil garlic paste mixture and marinate in mixture for 5 minutes at room temperature. 4. Warm a cast-iron skillet over medium heat, add the lamb chops and cook to desired doneness, about 3-4 minutes per side for medium-rare
Homemade garlic paste is the best! But if you'd like to save a bit on hands-on time, go ahead and purchase garlic paste and simply mince the rosemary into the paste before marinating the chops.
