One-Pot Salmon with Snap Peas and Rice

Ingredients

  • 1 pound salmon, chopped into pieces
  • 4 scallions, chopped
  • 1 tablespoon fresh ginger, grated
  • 1/3 cup soy sauce (or tamari)
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 cup white rice
  • a pinch sea salt, to taste
  • 2 cups sugar snap peas

Directions

Prep: 1. Chop salmon. 2. Chop scallions. 3. Grate ginger. Make: 1. Place rice plus 2 cups water in a skillet with proper fitting lid. Bring to a boil. Reduce heat to low and simmer, covered, for 10 minutes. 2. Meanwhile, mix soy sauce, scallions, vinegar, ginger, and sugar in a bowl. Set aside. 3. After rice has cooked for 10 minutes, add on top of rice: salmon, salt and pepper to taste. 4. Cover and cook 5 more minutes, then add peas over the salmon and rice. 5. Cover and cook until rice and peas are tender and the salmon is done. 6. Remove from heat and toss with sauce.
