Prep: 1. Cut lemongrass. 2. Dice carrots. 3. Slice chicken breasts. 4. Cut shallots into quarters. 5. Zest and juice lime. 6. Cut ginger into 1 inch pieces. 7. Chop cilantro and scallions. Make: 1. Combine: broth, shallots, ginger, lemongrass, 1 teaspoon lime zest, 1/4 teaspoon salt in a soup pot over high heat. 2. Bring to a boil, lower heat, simmer ~20 minutes. 3. Using slotted spoon, scoop out solids, discard. 4. Stir in coconut milk and continue to simmer, being careful not to boil, another ~10 minutes. 5. Meanwhile, put rice noodle into a bowl of hot water and soak ~10 minutes. Drain and set aside. 6. Add carrots, cayenne and chicken to the pot. Simmer 10 minutes until chicken is cooked through. 7. Stir in noodles, 2 tablespoons lime juice, salt to taste. 8. Serve and garnished with cilantro and scallion.
