Prep: 1. Juice lemon. Make: 1. Sprinkle salt, pepper and lemon juice over both sides of salmon. 2. Coat a skillet with olive oil; heat over medium-high heat. 3. Add fish (skin-side down) to skillet, and cook until skin is golden and fish releases easily from pan (~4 minutes). 4. Using a spatula, gently flip fish and cook about 3 minutes more. 5. Serve.
