Prep: 1.Preheat oven to 325. Line a baking sheet with parchment paper. 2. Separate eggs. Make: 1. In a medium bowl, whisk the egg white until foamy. Whisk in sugar and salt (if using). 2. Add coconut and stir until well mixed. 3. Form into approximately 1 inch balls and place onto baking sheet. 4. Bake them until slightly golden, about 15-20 minutes. Allow to cool on baking sheet.
