Prep: 1. Preheat the oven to 400. 2. Cut the ends off the shallots and peel them. 3. Cover a baking sheet with foil. Make: 1. Toss shallots with olive oil, balsamic vinegar, salt and pepper, and place on a baking sheet, top with the thyme sprigs and cover the with foil. 2. Bake for 20 minutes, then remove the foil and bake for another 15 minutes. 3. Remove and discard the thyme sprigs and serve.
