Prep: 1. Preheat oven to 425. 2. Remove greens and root end from radishes. 3. Chop thyme. Make: 1. Toss radishes with oil, thyme, and salt and pepper to taste. 2. Place radishes on a baking dish and roast, turning once, until golden brown about, 40–50 minutes.
Roasted radishes may seem a little out of the ordinary but roasting them mellows their peppery flavor and releases their natural earthy sweetness.
