Pan-Seared Cod with Lemon Aioli

Ingredients

  • 1 garlic clove, chopped
  • 1/2 lemon, juiced and zested
  • 1 cup mayonnaise
  • 1 tablespoon water
  • pinch of cayenne
  • 5 tablespoons extra-virgin olive oil
  • sea salt and freshly ground pepper
  • 4 6-ounce skinless cod fillets
  • 1/4 cup all purpose flour

Directions

Prep: 1. Chop garlic. 2. Zest and juice lemon. Make: 1. In a blender, puree mayonnaise with lemon juice and zest, garlic, water, cayenne and 3 tablespoons of olive oil. 2. Season aioli with salt and pepper and scrape it into a small bowl. 3. In a nonstick skillet, heat remaining 2 tablespoons of olive oil. 4. Season cod fillets with salt and pepper and dust with flour. 5. Cook fish over moderately high heat, turning once, until golden on outside and white throughout, about 10 minutes total. Transfer cod to plates and serve with lemon aioli.
