Prep: 1. Slice 1 1/2 cups strawberries for salad, mash 2 strawberries for vinaigrette. 2. Chop avocado. Make: 1. Heat 2 tablespoons olive oil in a skillet over medium heat. Add chicken breasts (cover if thick) and cook for 3-5 minutes per side side. Remove from pan and slice. (or use leftover chicken!) 2. Whisk together vinegar, 1 1/2 tablespoons olive oil, mashed strawberries, Italian seasoning and salt and pepper to taste. 3. Place the greens in a large bowl. Add strawberries, avocado, and chicken. 4. Toss with the desired amount of dressing.
If you want to take this salad up a notch add your favorite cheese and nuts (we like blue cheese and toasted almonds), bacon is another great addition! This is also great with leftover or rotisserie chicken.
