Mini Strawberry Pies

Ingredients

  • 2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup cold unsalted butter, cut into 1/2″ cubes
  • 2 eggs, lightly beaten
  • 1 1/2 pound strawberries
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon vanilla extract

Directions

Prep: 1. Prepare crust: Mix the flour and salt together, add the cold butter cubes and using your hands crumble the butter into the flour, then add the eggs and mix by hand until the dough forms a cohesive mass. Form the dough into 10-12 small disks, wrap in plastic wrap and place in the fridge. 2. Preheat oven to 400. 3. Hull and cut strawberries into quarters. 4. Grease muffin tin. Make: 1. Mix together strawberries, brown sugar, flour, cornstarch, cinnamon, nutmeg and vanilla. 2. Roll out each small disk until slightly less than 1/8 inch thick and place into muffin tin. You'll need to overlap the side a little to make it fit. 3. Scoop in filling into each pie crust and fold over the edges of the crust. 4. Bake at 400 for 30-40 minutes. Allow to cool before serving.
