Frittata with Mint and Spinach

Ingredients

  • 1/2 cup parmesan cheese, divided
  • 1/2 cup fresh mint, chopped
  • 1/4 cup extra virgin olive oil
  • 1 pound spinach
  • sea salt and pepper, to taste
  • 1 tablespoon freshly squeezed lemon juice
  • 8 eggs
  • 2/3 cup heavy cream

Directions

Prep: 1. Grate cheese. 2. Chop mint. 3. Preheat oven to 350. Make: 1. Heat 1 tablespoon of olive oil in frying pan and lightly sauté spinach, turn off heat and stir in some salt, pepper and lemon juice. 2. In separate bowl, combine eggs, about 3/4 of the cheese, cream, mint, salt and pepper. 3. Grease a pan with remaining olive oil, layer in spinach on bottom, then egg mix over that (okay if they mix), sprinkle remaining 1/4 of the grated cheese on top. 4. Bake for 15 minutes at 350. 5. Serve.
