Asparagus-Ham Quiche

Ingredients

  • 1 bunch of asparagus
  • 3 baked ham slices
  • 1 frozen puff pastry sheet, thawed
  • 4 large eggs
  • 1/4 cup whole milk
  • 1/2 cups gruyere cheese, grated
  • 1 cup swiss cheese, grated
  • 2 tablespoon fresh tarragon, chopped (optional)
  • 1/2 lemon, zested
  • salt and pepper to taste

Directions

Prep: 1. Pre-heat oven to 350. 2. Boil water (to blanch asparagus) 2. Chop woody ends off of asparagus, discard. Cut asparagus into 1 in pieces. 3. Grate cheeses and zest 1/2 lemon. 4. Chop tarragon (if using). 5. Slice ham. Make: 1. Blanch asparagus - put in boiling water for 2 minutes, then dunk in cold water. 2. Roll out dough and place in pie dish. 3. Arrange asparagus and sliced ham in crust. 4. Whisk eggs, milk, cheeses, tarragon, zest, salt and pepper and pour on top of ham and asparagus. 3. Bake for 35 minutes or until golden brown.

Notes

This decadent quiche can be made with any cheese you like. If you want to splurge using all gruyere it's delicious, but gets a bit spendy. Getting the woody ends off asparagus is a snap! Check out our favorite trick here - https://www.youtube.com/watch?v=lO--KBhVzeE
