Prep: 1. Chop lettuce. 2. Chop chicken into bite-sized pieces. Make: 1. Heat oil in a skillet over medium heat. Place chicken in skillet and cook until done through, about 3-4 minutes per side. (or use leftover chicken!) 2. In a medium bowl, combine yogurt, mayonnaise, and salt. Add in chicken and blueberries. 3. Warm tortillas in a dry skillet, about 2 minutes per side (or cover with a wet paper towel and microwave for about 30-60 seconds). 4. Once warm, top each with lettuce and about 1/2 cup chicken-blueberry salad . 5. Roll up each tortilla and secure with toothpicks if desired.
This is a great way to use leftover or rotisserie chicken! You can also add 1/4 cup chopped celery if you like. This is great with any season fruit, other favorites are strawberries or grapes.
