Prep: 1. Pre-heat oven to 350 and grease a loaf pan. (a 9x9 cake pan also works well, if using this reduce cooking time to 40 minutes) 2. Grate zucchini. Make: 1. Combine almond flour, cacao powder,salt, baking soda, eggs, coconut oil, maple syrup, and zucchini. 2. Bake for ~50 minutes.
Zucchini abounds in summer - this is a sweet way to use it up! If your zucchini is VERY moist exclude the applesauce.
