Paleo Chocolate Zucchini Bread

Ingredients

  • 2 1/4 cups blanched almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking soda
  • 4 eggs
  • 1/4 cup coconut oil
  • 1/2 cup + 2 tablespoons maple syrup
  • 1 1/2 cup zucchini, grated
  • 1/2 cup applesauce

Directions

Prep: 1. Pre-heat oven to 350 and grease a loaf pan. (a 9x9 cake pan also works well, if using this reduce cooking time to 40 minutes) 2. Grate zucchini. Make: 1. Combine almond flour, cacao powder,salt, baking soda, eggs, coconut oil, honey, and zucchini. 2. Bake for ~50 minutes.

Notes

Zucchini abounds in summer - this is a sweet way to use it up! If your zucchini is VERY moist exclude the applesauce.
