Rhubarb Crisp (GF)

Ingredients

  • 4 cups rhubarb, cut into bite size pieces
  • 2/3 cup agave nectar
  • 1/2 cup, plus 2 tablespoons blanched almond flour, divided
  • 1/2 cup oats (optional)
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 2 tablespoon cold unsalted butter, chopped
  • 2 tablespoon brown sugar

Directions

Prep: 1. Slice rhubarb. 2. Preheat oven to 375. Make: 1. Stir rhubarb, agave, 1/2 cup almond flour, cinnamon, and 1 tablespoon lemon juice in bowl. 2. Make topping: Mix of 2 tablespoon each of butter, brown sugar, almond flour, and 1/2 cup oats. 2. Pour into pie pan, cover with topping 3. Bake at 375 for 35 minutes.

Notes

We love bulking up the topping with oats, but feel free to leave them out if you prefer.
