Make: 1. Dissolve yeast in warm water. 2. Meanwhile, warm cottage cheese and butter over low heat. 3. While cottage cheese is warming, mix sugar, garlic powder, dried dill, salt, and baking soda. 4. Add egg, warm cottage cheese and yeast. Slowly mix in flour. Once flour is incorporated mix quickly (almost like you're kneading it with the spoon) for 3-5 minutes. 5. Cover and let rise until double. Punch down and put into well greased 8" round pan. Let rise 30-40 minutes. 6. Bake at 350 for 40-50 minutes.
Water for yeast should be feel very warm but not hot, test it on the inside of your wrist. This is a batter bread so doesn't require real kneading. If you have fresh dill on hand you can substitute 1 tablespoon of fresh chopped dill for the dry. We also occasionally substitute yogurt for the cottage cheese if that's what we have on hand.
