Restorative Broth

Ingredients

  • 6 unpeeled carrots, cut into thirds
  • 2 unpeeled onions, cut into chunks
  • 1 leek, cut into thirds
  • 10 stalks celery, including the heart, cut into thirds
  • 4 unpeeled red potatoes, quartered
  • 2 unpeeled japanese or regular sweet potatoes, quartered
  • 1 unpeeled garnet yam, quartered
  • 5 unpeeled cloves garlic, halved
  • 3/4 cup fresh italian parsley (about 1/2 a bunch)
  • 1 8-inch strip of dried seaweed
  • 12 black peppercorns
  • 2 bay leaves
  • 1 teaspoon sea salt

Directions

Prep: 1. Chop vegetables in large chunks (but don't peel). Make: 1. Place everything in large stockpot, fill with 8 quarts of water to 2" below rim, cover, bring to boil. 2. Decrease heat and simmer, uncovered, for at least 4 hours (add more water as needed) 3. Strain broth, and add salt to taste. 4. Cool to room temp before refrigerating or freezing.
