Orange Chicken

Ingredients

  • 1 pound boneless chicken thighs
  • 1 tablespoon soy sauce
  • 1 teaspoon vinegar
  • 1 teaspoon ginger, grated
  • 1/2 cup flour
  • 1 cup canola oil for frying
  • 1 orange, juiced
  • 1/3 cup orange marmalade
  • 1/2 teaspoon salt
  • 2 teaspoons corn starch

Directions

Prep: 1. Grate ginger. 2. Juice orange. Make: 1. Mix together the soy sauce, vinegar and ginger. Add chicken and marinate for at least 15 minutes. 2. When the chicken is done marinating, lightly dust each piece with flour (you might not use it all). 3. Heat a saucepan with at least 1/2" of oil in it over medium heat until hot. 4. Fry the chicken until golden brown and transfer to a paper towel lined plate to drain. 5. In a separate pan over medium high heat, whisk together the orange juice, marmalade, 2 teaspoons of cornstarch and the salt, stirring constantly until the sauce is thick and bubbly. 6. Toss the fried chicken in the orange sauce and serve.

Notes

For a healthier version, don't coat chicken with flour and then just pan sear the chicken for 3-4 minutes per side and toss with sauce.
