Prep: 1. Preheat oven to 425. 2. Peel sweet potato and cut into about 1/2" pieces. 3. Squeeze lime juice. 4. Chop scallions. Make: 1. On a baking sheet, toss together sweet potato pieces, canola oil and salt. 2. Roast in the oven until tender, about 15 minutes. 3. Heat sesame oil in pan on stovetop (medium heat), stir in snow peas, scallions and salt and pepper. Stir fry until bright green about 2-3 minutes. Serve: Snow peas, topped with roasted sweet potato and freshly squeezed lime juice.
