Thai Turkey Salad

Ingredients

  • 1/4 cucumber, sliced
  • 2 limes
  • 1 tablespoon canola oil
  • 1 pound ground turkey
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 4 cups shredded cabbage
  • 1/2 cup fresh mint leaves
  • 1/2 cup chopped peanuts

Directions

Prep: 1. Slice cucumber, 1 lime into wedges, and mint. 2. Juice 1 lime. Make: 1. Heat oil in a skillet over medium-high heat. 2. Add turkey and cook, breaking it up with a spoon, until browned, 3-5 minutes. 3. Add fish sauce, sugar, and 1/4 cup water to skillet and cook, stirring, until liquid has almost evaporated, 2-4 minutes. 4. Meanwhile, in a bowl, toss cabbage, cucumber, mint, and peanuts with lime juice. 5. Top with turkey mixture and serve with lime slices.
