Tomato, Avocado, and Basil Salad

Ingredients

  • 4 tomatoes
  • 1 onion, thinly sliced
  • 2 ripe avocados
  • sea salt and pepper, to taste
  • 1 1/2 tablespoon extra-virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1/2 cup fresh basil, more to taste

Directions

Prep: 1. Cut tomatoes into eighths. 2. Slice onion. 3. Peel, pit and slice avocado. Make: 1. In a bowl, toss tomatoes and onion with salt, pepper, olive oil, and vinegar. 3. Lay avocado slices on top and scatter with fresh basil leaves.

Notes

Make it your own by adding a handful of cilantro or your favorite herbs! Fill a pita with this salad for a quick veggie sandwich.
