Prep: 1. Slice shallots. 2. Chop/tear cilantro and mint. 3. Mince chile. 4. Shred chicken. Make: 1. Combine chicken and shallots in shallow bowl. 2. Add cilantro and mint leaves and mix well. 3. In a bowl, combine chile, black pepper, fish sauce and 3 tablespoons lime juice and mix well. 4. Pour sauce over chicken mixture and toss. Serve.
