Prep: 1. Mince garlic. 2. Chop romaine, slice roasted red peppers and salami, grate cheese. 3. Drain and rinse beans. Make: 1. Whisk together olive oil, vinegar, garlic, dry mustard, thyme, oregano, salt and pepper. 2. Toss together romaine, chickpeas, red peppers, salami and cheese with dressing.
This is also great topped with grilled chicken.
