Prep: 1. Peel and chop mangoes. Make: 1. In blender, place mango, cilantro, 1 teaspoon vanilla, and 1/2 lemon juice. Pulse ingredients together and then taste them. Add sugar (or other sweetener) to taste, if needed. 2. When well blended, pour into a bowl or measuring cup with a spout for pouring. Set aside. 3. In a separate bowl, stir together yogurt, 1/2 lemon juice, honey and 1 teaspoon vanilla. 4. When ready, get out popsicle molds or small paper cups. Pour mango mix in first, filling it 1/3 of the way. 5. Spoon yogurt mix on top, filling it to the 2/3rds full mark and finish it off with a second layer of fruit. 6. Make sure to leave about 1/2-1/3 of an inch at top for expansion during freezing. Pop in sticks and freeze before enjoying. Note: To easily remove popsicles from mold, run warm water on the outsides of them first which will free them up.
