Butter Lettuce Herb Salad

Ingredients

  • 1/4 cup pistachios, shelled and lightly toasted
  • 1/2 tablespoon fresh tarragon, lightly chopped
  • 1/2 tablespoon fresh dill, lightly chopped
  • 4 cups butter lettuce
  • 1 lemon, zested and juiced
  • 1 1/2 tablespoons extra virgin olive oil
  • 1/4 teaspoon dijon mustard
  • 1/4 teaspoon honey
  • a pinch of sea salt to taste

Directions

Prep: 1. Shell and lightly toast pistachios (toast ~4 minutes in 350 degree oven). 2. Chop herbs. Make: 1. Layer in bowl: lettuce, herbs, pistachios. 2. Whisk together vinaigrette: lemon juice and zest, olive oil, mustard, honey, salt. 3. Drizzle dressing over salad and serve.

Notes

This is one of our favorites from the Seattle restaurant "Whale Wins". This is also great topped with freshly grated Parmesan cheese.
