Prep: 1. Shell and lightly toast pistachios (toast ~4 minutes in 350 degree oven). 2. Chop herbs. Make: 1. Layer in bowl: lettuce, herbs, pistachios. 2. Whisk together vinaigrette: lemon juice and zest, olive oil, mustard, honey, salt. 3. Drizzle dressing over salad and serve.
This is one of our favorites from the Seattle restaurant "Whale Wins". This is also great topped with freshly grated Parmesan cheese.
