Chicken Souvlaki

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 2 cucumbers, sliced into thin half-moons
  • 1/2 cup sweet onion, sliced
  • 2 tablespoons chopped fresh dill
  • 3 tablespoons extra-virgin olive oil
  • 1 lemon, juiced
  • sea salt and black pepper
  • 1/2 cup plain yogurt

Directions

Prep: 1. Slice chicken, cucumber, onion and dill. 2. Juice lemon (need ~3 tablespoons juice). Make: 1. In a bowl, combine oil, lemon juice, 3/4 teaspoon salt and 1/4 teaspoon pepper. 2. Fold in chicken, cucumbers, onion and dill. 3. Divide chicken mixture evenly and serve with yogurt.

Notes

Got leftovers? Turn them into a salad! Serve chicken mixture over greens with your favorite vinaigrette.
