Swiss Chard and Beef Stir-fry

Ingredients

  • 6 ounces beef steak, thinly sliced
  • pinch of sea salt, to taste
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh ginger, minced
  • 4 scallions
  • 1 bunch Swiss chard
  • 1 tablespoon lime juice
  • 4 tablespoons extra virgin olive oil

Directions

Prep: 1. Slice steak into thin strips and season with salt. 2. Mince garlic and ginger. 3. Thinly slice scallions. 4. Remove stems from Swiss chard and slice. Roughly chop leaves. 5. Juice lime. Make: 1. Heat 1 tablespoon oil in a skillet over medium-high heat. Add steak and cook, stirring, until beef is golden brown on both sides, about 2 minutes. 2. Add another tablespoon oil and add garlic, ginger, scallions, and Swiss chard stems. Cook, stirring constantly, about 1-2 minutes. 3. Add another tablespoon oil add the Swiss chard leaves and cook, stirring, until wilted, about 2 minutes. 4. Drizzle with lime juice, salt to taste, toss to coat, and serve immediately.

Notes

This is also great with a little hot chili sauce. Make it your own by using your favorite leafy green or adding in any extra veggies.
