Prep: 1. De-rib and thinnly slice kale. 2. Put the shredded kale in cold water and soak for a few minutes before draining. 3. While kale is soaking, shred carrots. Make: 1. Combine drained kale, shredded carrot and raisins. 2. To make the dressing, whisk the mayonnaise, lemon juice, fennel seeds and salt together. 3. Pour over the kale and toss to coat evenly.
