Quick Grilled Potatoes

Ingredients

  • 2 pounds potatoes
  • sea salt and pepper to taste
  • 2-3 tablespoons extra virgin olive oil

Directions

Prep: 1. Preheat grill. 2. Boil water. 3. Slice or quarter potatoes. Make: 1. Once water is boiling, cook potatoes for 5-6 minutes, drain well when done. (at this point the potatoes can sit as long as needed while you prepare the rest of the meal) 2. Toss potatoes with olive oil and salt and pepper to taste (if desired add any other herbs or spices at this time as well) 2. When grill is hot, grease grates and place potatoes directly onto the grill. 3. Cook until golden brown and crispy, about 4 minutes per side depending on thickness of potatoes.

Notes
