Grilled "potato Salad"

Ingredients

  • 2 pounds potatoes
  • sea salt and pepper to taste
  • 1/4 cup mayonnaise
  • 2 tablespoons dijon mustard
  • 2 teaspoons Italian seasoning

Directions

Prep: 1. Preheat grill. 2. Boil water for potatoes. 3. Slice or quarter potatoes. Make: 1. Once water is boiling, cook potatoes for 5-6 minutes, drain well when done. (at this point the potatoes can sit as long as needed while you prepare the rest of the meal) 2. Toss potatoes with mayonnaise, dijon mustard, and Italian seasoning. 2. When grill is hot, grease grates and place potatoes directly onto the grill. 3. Cook until golden brown and crispy, about 4 minutes per side depending on thickness of potatoes.

Notes
