Prep: 1. Boil water for potatoes. 2. Slice or quarter potatoes. 3. Pre-heat grill. Make: 1. Once water is boiling, cook potatoes for 5-6 minutes, drain well when done. (at this point the potatoes can sit as long as needed while you prepare the rest of the meal) 2. Toss potatoes with pesto and olive oil (add a little more olive oil if needed). 3. When grill is hot, grease grates and place potatoes directly onto the grill. 4. Cook until golden brown and crispy, about 4 minutes per side depending on thickness of potatoes and heat of grill.
These unbelievably good potatoes are the perfect addition to any meal on the grill. Any type of pesto or other oil based sauce (like chimichurri, diced sun dried tomatoes, or olive tapenade works well for this recipe).
