Prep: 1. Trim and chop green beans. Make: 1. Steam (or boil) green beans for 3 minutes or until desired consistency. If using potatoes, boil them as well, about 7 minutes. 2. Bring a pot of water to a boil and add salt. Cook pasta and drain, reserving some of the starchy water. 3. Thin out pesto with 2 tablespoons of pasta water. 4. Add beans to pasta and dress everything with pesto and 3-4 tablespoons lemon juice, using a little olive oil if needed. 5. Serve topped with Parmesan.
Boil, peel and slice a potato to add for a heartier dish! You can also boil the pasta and green beans in the same pot for less mess.
