Quinoa and Black Bean Burger with Avocado Spread

Ingredients

  • 2 cups of cooked quinoa (about 2/3 cup dry)
  • 2 cloves of garlic, minced
  • 1 15 ounce can of black beans
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cumin
  • sea salt and black pepper, to taste
  • 1 ripe avocado
  • 1 tomato, chopped
  • 1/4 teaspoon of smoked paprika
  • 1/4 teaspoon of crushed red pepper
  • 1 tablespoon extra virgin olive oil
  • 1/2 head butter lettuce (optional)

Directions

Prep: 1. Cook quinoa according to package (can do ahead of time). 2. Mince garlic. 3. Combine black beans, turmeric, cumin, garlic, salt and pepper in large bowl and mash well. 4. Add quinoa and combine. Adjust seasonings if necessary. 5. Form mix into 5 patties. Transfer to plate, cover and chill for at least 15 minutes while making spread. Patties will keep for 3-4 days. For spread: 1. In a bowl, mash avocado until smooth. 2. Mix in diced tomato, smoked paprika, red pepper, salt and pepper to taste. Make: 1. In a large non-stick frying pan, heat olive oil over medium heat. 2. Add cakes (3 or 4 at a time, depending on pan size), turning over once it has browned. 3. Serve immediately with avocado spread.

Want a low carb option? Instead of buns, wrap your burgers in the lettuce leaves!
