String Beans with Garlic

Ingredients

  • 1 pounds green beans, both ends removed
  • 3 garlic cloves, sliced
  • 1 tablespoon unsalted butter
  • 1 tablespoon extra virgin olive oil
  • sea salt and black pepper, to taste

Directions

Prep: 1. Wash green beans and trim both ends. 2. Slice garlic. Make: 1. Blanch the string beans in a large pot of boiling salted water for just 1 1/2 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When cool, drain and set aside. 2. Heat butter and olive oil in a very large sauté pan over medium heat. 3. Cook garlic 1-2 minutes, tossing occasionally, until lightly browned. 4. Add the string beans, sprinkle with salt and pepper, and toss together.

Notes

This method works well with many vegetables. Our other favorites include: kale, swiss chard, collard greens, and asparagus. Also try adding pine nuts or toasted almonds.
