Roasted Parsnips and Apples

Ingredients

  • 2 pounds parsnips, peeled and cut into 1/2 inch slices
  • 2 apples, diced
  • 3 tablespoons unsalted butter, cut into small pieces
  • 1 orange
  • 1/4 teaspoon ground cinnamon
  • a pinch of coarse salt

Directions

Prep: 1. Cut parsnips, apples and butter. 2. Grate 1 tablespoon of orange peel. 3. Juice 1 tablespoon of orange juice. Make: 1. Preheat oven to 450. 2. On a baking sheet, combine parsnips and apples. Dot with butter. 3. Roast until tender, about 30 minutes. Stir half way through. 4. Toss with orange zest, orange juice and cinnamon, season with salt.

Notes

Make it your own: add carrots and/or a pinch of your favorite spice!
