Roasted Beets

Ingredients

  • 8 beets
  • 2-3 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons fresh thyme leaves
  • sea salt and black pepper, to taste
  • 1 orange, juiced

Directions

Prep: 1. Preheat oven to 400. 2. Wash beats well. Remove tops and roots of the beets, peel if desired. Cut beets into 1 1/2-inch chunks. 3. Chop thyme. Make: 1. Place cut beets on a baking sheet and toss with the olive oil, thyme, salt, and pepper. 2. Roast for 35-40 minutes, turning once or twice with a spatula, until beets are tender. 3. Meanwhile, juice orange. 4. Remove beats from oven and toss with orange juice. (You can also add balsamic vinegar if desired.) Sprinkle with salt and pepper and serve warm.

Notes

The thyme and orange juice in this add a little something extra but these are also great with just the salt and pepper!
