Prep: 1. Preheat oven to 250. 2. Slice chicken, onions and peppers into 1/2 inch strips. Make: 1. Make the fajita seasoning: Whisk together chili powder, cumin, paprika, cayenne pepper, garlic powder, salt, and pepper in a small bowl. Set aside. 2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. 3. Add the strips of chicken to the pan, and sprinkle with 3/4 of the fajita seasoning. Mix together and cook for 2-3 minutes, or until browned. 4. Leaving the chicken in the pan, add the remaining oil and the peppers and onions. Stir in the remaining fajita seasoning. Cook until the vegetables are soft, about 8 to 10 minutes more, stirring occasionally. 6. While the veggies and meat are cooking, wrap the stack of tortillas in tin foil and warm in the oven. 7. To assemble the fajitas, fill warmed tortillas with a mix of chicken, peppers and onions, and top with your favorite garnishes.
We like to make a big batch of the seasoning and keep it for super quick fajitas next time. You can also sub store-bought fajita seasoning if you prefer, use about 3 teaspoons or more to taste.
