Prep: 1. Peel and cut potatoes into 1 1/2-inch-thick slices (you can also leave peels on). Make: 1. Place potatoes in a saucepan and cover with cold water; add 1 tablespoon salt, bring to a simmer. 2. Keep at a low simmer until a knife slips in and out easily. Drain potatoes. 3. Meanwhile, warm milk over low in a small saucepan or slowly in the microwave. 4. Mash potatoes to desired consistency, then mix in butter. Add in warm milk, mashing continuously. Add pepper and salt to taste; mash to combine. Serve immediately.
To bring the potatoes up a notch try adding 1/4 teaspoon ground nutmeg.
