Prep: 1. Slice kale. 2. Toast pine nuts. Make: 1. Whisk white balsamic vinegar, honey, oil, and salt in large bowl. 2. Add kale, currants, and pine nuts; toss to coat. 3. Let marinate 20 minutes at room temperature, tossing occasionally. 4. Season to taste with salt and pepper. Sprinkle cheese shavings over salad and serve.
We find that the key to kale salad is massaging it a little either as you wash it, or with the vinegar. If you want to make this a heartier side, or even a main dish, try adding roasted butternut squash or beets. Candied walnuts or toasted almonds can be substituted for pine nuts if desired.
