Prep: 1. Place eggs in a saucepan and cover with at least an inch of cold water. 2. Bring water to full boil, uncovered, and let cook for 12 minutes. Make: 1. While eggs are cooking, wash spinach and tear into bite sized pieces. Cut the tomato into wedges. 2. Rinse eggs in cold water, peel, and slice. 3. Arrange salad on individual plates or toss with favorite dressing.
