Prep: 1. Chop onion. 2. Mince garlic. Make: 1. Heat oil in pot. 2. Add onion and garlic and saute for 4 minutes. 3. Add rice and saute for 2 minutes. 4. Add vegetable broth, bring to a boil, cover and lower heat and cook for 20 minutes. Add the spices and black beans, cook until warmed through, about 5 minutes.
