Prep: 1. Combine water and salt in a large pot, bring to a boil over high heat. 2. Rinse the quinoa. Add to pot and stir briefly. When it returns to a boil, reduce heat to low and simmer gently until quinoa absorbs the liquid and grains are tender, about 10 to 15 minutes. Or use a rice cooker. 3. Chop cucumber and bell pepper. Make: 1. When quinoa is ready, stir in cucumber, pepper, white wine vinegar and olive oil until well combined. Taste, adjust seasoning, as needed, and serve.
This light main is perfect for summer and is great topped with grilled chicken or shrimp.
