Prep: 1. Trim snow peas, drain canned pineapple, and thinly slice chicken. Make: 1. Heat a large skillet over high heat. Add oil and curry paste and cook until fragrant, one minute. 2. Add chicken and cook, stirring frequently, until starting to brown, about 2 minutes. 3. Add the snow peas and pineapple and saute until chicken is cooked through, about 3 minutes. 4. Stir in the basil and fish sauce. Season to taste with salt.
